Garam Masala Powder by Zarnak Sidhwa

Ingredients:
- Bay leaves 8
- Black cardamoms 10-12 pieces
- Cinnamon sticks 10-12 pieces
- Coriander seeds 8 tbsp
- Cumin seeds 3 tbsp
- Cloves 2 tbsp
- Nutmeg 1
- Star anise 1-2
- Black peppercorns 2 tbsp
Method 1:
- In a wok, dry roast all ingredients one by one.
- The spices should be roasted slowly until they are aromatic, then allow to cool and then grind into fine powder.
Method 2:
- Put all ingredients on plate.
- Dry these for 2-3 days under the sun and grind to powdered form afterwards.
- Store it in an airtight glass container for up to 3 months.
