Tamarind Chutney by Zarnak Sidhwa

Ingredients:

  • Tamarind 2 cups
  • Sugar or jaggery 1 cup
  • salt to taste
  • Black salt 1/4 tsp
  • Red chilli powder 1/2 tsp
  • Roasted cumin powder 1/2 tsp
  • Garam masala 2 tsp
  • Raisins 10-15

Method:

  1. Soak tamarind in 2 cups of warm water for 1 hour. Pass through a strainer. Try to take out as much pulp as possible. In a pan, add sugar or jaggery and tamarind pulp and cook on low heat for 10-15 minutes. Now add the remaining ingredients and keep stirring on low heat till it thickens. Turn off heat. Once it cools down, refrigerate it in a glass container and use as desired.
