Tamarind Chutney by Zarnak Sidhwa

Ingredients:
- Tamarind 2 cups
- Sugar or jaggery 1 cup
- salt to taste
- Black salt 1/4 tsp
- Red chilli powder 1/2 tsp
- Roasted cumin powder 1/2 tsp
- Garam masala 2 tsp
- Raisins 10-15
Method:
- Soak tamarind in 2 cups of warm water for 1 hour. Pass through a strainer. Try to take out as much pulp as possible. In a pan, add sugar or jaggery and tamarind pulp and cook on low heat for 10-15 minutes. Now add the remaining ingredients and keep stirring on low heat till it thickens. Turn off heat. Once it cools down, refrigerate it in a glass container and use as desired.
