Ingredients:

For Dough:

  • Flour 1 cup
  • Spinach blanched 1 bunch
  • Sesame seeds 2 tsp
  • Crushed cumin 1/2 tsp
  • Garlic 2 cloves
  • Green chilies 2
  • Salt to taste
  • Oil 4 tsp
  • Water to make dough

For Filling:

  • Boiled noodles 1/2 cup
  • Spring onion 2-3
  • Cabbage 1 cup
  • Carrot 1/2 cup
  • Green chilies 3-4
  • Capsicum 1
  • Soya sauce 1 tbsp
  • Salt as required
  • Black pepper 1/2 tsp
  • Vinegar 1 tsp
  • Egg 1
  • Corn flour 1/2 tsp
  • Oil for frying

Method:

  1. Put spinach, garlic cloves, green chilies, oil, salt, crushed cumin and sesame seeds and make dough.
  2. Now make small portions like puri, cover it and leave it.
  3. For Filling: Heat some oil and saute spring onion, cabbage, carrot, green chilies and capsicum on high flame.
  4. Now add boiled noodles, salt, black pepper, soya sauce and vinegar, toast it and mix it.
  5. Then put some water drops in corn flour, add in it, take it out and cool it.
  6. Now add beaten egg and mix it nicely.
  7. For samosa: Roll small portions and cut into 1/4 inch circle.
  8. Now fold in semi circle, fill with filling and close sides with water.
  9. Ready all samosay lie this.
  10. Then deep fry samosay in hot oil until golden.
  11. Serve with tamatar ki chutney.
