Spring Rolls by Zarnak Sidhwa

Ingredients:

  • Cabbage 2 cups
  • Grated carrots 3
  • Green capsicum 1
  • Corn 1/4 cup
  • Green chilies 2-3
  • Chicken breast cubes 1
  • Spring onions 1/4 cup
  • Soya sauce to taste
  • Salt to taste
  • Black pepper to taste
  • Lemon juice 1 lemon
  • Ghee 2 tbsp
  • Oil 3 tbsp
  • Chopped ginger 2 tbsp
  • Ginger paste 1/4 tsp
  • Garlic paste 1/4 tsp
  • Turmeric powder 1/4 tsp

Method:

  1. Heat 1 tbsp ghee in pan, add chicken breast cubes, ginger paste, garlic paste, salt, 1 pinch of chili powder and turmeric powder with out water and cook it.
  2. When chicken tender, add lemon juice and dry water.
  3. When cool, shred chicken.
  4. Heat 1 tbsp ghee and oil in pan.
  5. When ghee melts, add cabbage and stir fry it on high flame.
  6. Then add grated carrots and capsicum.
  7. Now mix corn, green chilies, salt, soya sauce and black pepper in it, take it out in bowl, cool it and drain water.
  8. When mixture in cool, add spring onions, shredded chicken, 2 tbsp green coriander, salt and black pepper.
  9. Put filling in roll wraps and make roll.
  10. Close edges with flour water mixture and deep fry roll.
  11. Serve with chili garlic sauce or soya sauce.
