Spring Rolls by Zarnak Sidhwa

Ingredients:
- Cabbage 2 cups
- Grated carrots 3
- Green capsicum 1
- Corn 1/4 cup
- Green chilies 2-3
- Chicken breast cubes 1
- Spring onions 1/4 cup
- Soya sauce to taste
- Salt to taste
- Black pepper to taste
- Lemon juice 1 lemon
- Ghee 2 tbsp
- Oil 3 tbsp
- Chopped ginger 2 tbsp
- Ginger paste 1/4 tsp
- Garlic paste 1/4 tsp
- Turmeric powder 1/4 tsp
Method:
- Heat 1 tbsp ghee in pan, add chicken breast cubes, ginger paste, garlic paste, salt, 1 pinch of chili powder and turmeric powder with out water and cook it.
- When chicken tender, add lemon juice and dry water.
- When cool, shred chicken.
- Heat 1 tbsp ghee and oil in pan.
- When ghee melts, add cabbage and stir fry it on high flame.
- Then add grated carrots and capsicum.
- Now mix corn, green chilies, salt, soya sauce and black pepper in it, take it out in bowl, cool it and drain water.
- When mixture in cool, add spring onions, shredded chicken, 2 tbsp green coriander, salt and black pepper.
- Put filling in roll wraps and make roll.
- Close edges with flour water mixture and deep fry roll.
- Serve with chili garlic sauce or soya sauce.
