Lucknowi Chicken Biryani by Shireen Anwer

Ingredients:
- Chicken 1 kg
- Rice 1/2 kg
- Chopped fry onion 4 tbsp
- Yogurt 1 cup
- Salt 1-1/2 tsp
- Ginger garlic 2 tbsp
- All spices 1 tsp
- Red chilies 1 tsp
- Turmeric 1 pinch
- Green chilies 6
- Cashew nuts 6
- Poppy seeds 1 tbsp
- Coconut powder 1 tsp
- Roasted gram powder 1 tsp
- Saffron 1/4 tsp
- Kewra 1 tsp
Method:
- Marinate chicken with ginger garlic, salt and yogurt for 30 minutes.
- Now heat oil and put green chilies, cashew nuts, poppy seeds, coconut powder and roasted gram powder.
- Then add marinated chicken. Also put red chilies, turmeric and all spices and fry it nicely.
- Now cover it and leave it until chicken tender and thick gravy remains.
- Boil rice 1/4 with salt and 1 tbsp whole mix spices.
- Now spread half rice in one pan with chicken mixture.
- Put remaining rice.
- Put saffron and kewra and keep on simmer for 15-20 minutes.
