Ingredients:

  • Butter 3 oz
  • Oil 1/4 cup
  • Caster sugar 1 cup
  • Vanilla essence 1 tsp
  • Coffee 2 tsp
  • Eggs 3
  • Flour 2 cups
  • Milk 2/3 cup
  • Thick curd 1/3 cup
  • Vinegar 1 tsp
  • Baking powder 2 tsp
  • Baking soda 1/4 tsp

For Frosting:

  • Cream cheese 4 oz
  • Whipped cream 1 cup
  • Butter 4 oz
  • Icing sugar 1 cup
  • Coffee 1 tsp
  • Milk 1 tbsp
  • Coco powder to dust

For Soaking Syrup:

  • Water 1 cup

Method:

  1. Strain flour, baking powder and baking soda in one bowl.
  2. Now put butter caster sugar mixture in it and keep it aside.
  3. Put eggs, milk, curd, coffee, vanilla essence, vinegar and oil in second bowl and beat for 2 minutes.
  4. Now put this mixture in flour mixture and beat it lightly.
  5. Now put mixture in muffin tray and bake on 180 degrees C for 15 minutes.
  6. Now take it out and cool it.
  7. Spread coffee syrup on cup cakes.
  8. For frosting: Beat cream cheese and put butter and icing sugar.
  9. Then add dissolved coffee and fold in whipped cream.
  10. Fill cream in pipping bag and pipe it out.
  11. In end, dust with coco powder and serve.
