Ingredients:
- Butter 3 oz
- Oil 1/4 cup
- Caster sugar 1 cup
- Vanilla essence 1 tsp
- Coffee 2 tsp
- Eggs 3
- Flour 2 cups
- Milk 2/3 cup
- Thick curd 1/3 cup
- Vinegar 1 tsp
- Baking powder 2 tsp
- Baking soda 1/4 tsp
For Frosting:
- Cream cheese 4 oz
- Whipped cream 1 cup
- Butter 4 oz
- Icing sugar 1 cup
- Coffee 1 tsp
- Milk 1 tbsp
- Coco powder to dust
For Soaking Syrup:
Method:
- Strain flour, baking powder and baking soda in one bowl.
- Now put butter caster sugar mixture in it and keep it aside.
- Put eggs, milk, curd, coffee, vanilla essence, vinegar and oil in second bowl and beat for 2 minutes.
- Now put this mixture in flour mixture and beat it lightly.
- Now put mixture in muffin tray and bake on 180 degrees C for 15 minutes.
- Now take it out and cool it.
- Spread coffee syrup on cup cakes.
- For frosting: Beat cream cheese and put butter and icing sugar.
- Then add dissolved coffee and fold in whipped cream.
- Fill cream in pipping bag and pipe it out.
- In end, dust with coco powder and serve.
