Falafel
Ingredients:
chickpeas 250 gms
garlic 4 tbsp
green coriader 1/2 cup
green chillies 5-6
red chilli powder 1 tbsp
baking powder 1/8 tsp
flour 2 tbsp
salt to taste
crushed red chillies 1 tbsp
oil for frying
Method:
Soak chickpeas overnight then discard the water and place the chickpeas in a chopper and prepare a paste.
In a grinder prepare a green chilli and coriander paste, add this to the chickpea paste
Now add in salt, red chilli powder, baking powder,crushed red chillies,flour, garlic and mix well
Now make pakoras out of the prepared mixture, fry in hot oil on a medium flame until the are golden
Serve while hot.
falafel sandwich
ingredients:
falafel 1 cup
salt to taste
ketchup 1 tbsp
black pepper 1-1/2 tsp
mayonnaise 1-1/2 cup
bread 1 big
cream cheese 5 tbsp
Method:
Add salt,black pepper,mayonnaise and cream cheese to falafel.
Now spread this on the bread slices
Put the other slice on top and serve
garlic sauce
Ingredients:
garlic 5 cloves
salt 1/4 tsp
oil 1 cup
lemon juice 1/4 cup
egg whites 2
Method:
Mix together garlic,salt,lemon juice, egg white and oil to prepare the garlic sauce
Pita bread
Ingredients:
flour 4 cup
salt 1-1/2 tsp
lukewarm water 1-1/2 cup
yeast 1-1/4 tsp
sugar 1 tsp
oil 1 tbsp
Method:
In bowl add yeast,sugar, lukewarm water and leave aside.
In a big bowl add 3 cups and salt and mix well.
then add in the yeast mixture,water and knead. Also add in 1 tbsp of olive oil on top of the dough
Grease a bowl with olive oil ,place the dough in it cover with a cloth and keep in a hot place.
When it doubles in size take it out of the bowl, sprinkle flour and knead.
Make small balls out of the dough and keep for 10 minutes
Preheat oven to 232 degree centigrade
Now roll out the dough balls and place on the oven tray cooke for 3-4 minutes on both sides and take it out
pita bread is ready
Humus
Ingredients:
chickpeas 2 cup
garlic 2 cloves
water 1/2 cup
tahini paste 2 tbsp
lemon juice 2 tbsp
olive oil 2 tbsp
salt 1/4 tsp
Method:
Mix together all of the ingredients to prepare humus
Tahini
Ingredients:
sesame seeds 1 cup
olive oil 2 tbsp
Method:
roast sesame seeds, next place them in a grinder and gradually add olive oil
tahini sauce is ready
