Thandai by Zarnak Sidhwa

Ingredients:
- Milk 1 liter
- Caster sugar 1/2 cup
- Saffron a few strands
- Pistachios (thinly slivered) to garnish 2
To be ground into a fine powder:
- Almonds 1/4 cup
- Poppy seeds 2 tbsp
- Fennel seeds 2 tbsp
- Cardamom powder 1/2 tsp
- White peppercorns 20
- Rose water or kewra water 2 tsp
Method:
- Boil milk.
- Add sugar to milk and ensure that it is well blended.
- Allow milk to cool completely. Keep aside.
- Add ground powder in milk and mix well.
- Refrigerate mixture for 3 to 4 hours.
- Strain mixture through a very fine sieve, add few strands of saffron and mix well.
- Refrigerate n serve chilled.
