Arabian Kabsa by Chef Gulzar

Ingredients:
- Chicken 1
- Sela rice 1/2 kg
- Gallic paste 2 tbsp
- Onion chopped 2
- Tomatoes 2-3
- Tomatoes puree 1/2 cup
- All spice powder 1 tbsp
- Crushed black pepper 1 tsp
- Cinnamon powder 1/2 tsp
- Crushed green cardamom 4-5
- White pepper powder 1 tsp
- Cloves 2-3
- Cumin powder 1/2 tsp
- Nutmeg 1/2 tsp
- Coriander powder 1/2 tsp
- Carrot slice 1
- Capsicum slice 1
- Lemon juice 2 tbsp
- Zafran 1 pinch
- Butter 2-3 tbsp
- Stock as required
- Olives oil 2-3 tbsp
- Almonds roasted as required
- Salt to taste
Method:
- For kabsa masala: Add lemon juice, all spice powder, white pepper powder, cinnamon powder, crushed cardamoms and saffron in mixing bowl and mix it.
- For kabsa: Clean rice and soak it
- Mix oil and butter in pan and add it.
- Now add chopped onions and garlic paste
- Then add chicken and fry it.
- Now add tomatoes and tomato puree and roast it.
- Then put carrot, capsicum, cloves, nutmeg, coriander powder, cumin powder, salt and crushed black pepper, mix it and cook it.
- Now add kabsa spices and mix it.
- Then separate chicken.
- Put chicken stock in kabsa and mix it.
- When it is boiled, add rice.
- When rice tender, add chicken and simmer it.
- When simmer is completed, take out in dish, garnish with roasted almonds and serve.
