Chana Pulao by Zarnak Sidhwa

Ingredients:
- Basmati rice 1 kg
- Oil 2 tbsp
- Chopped ginger 2 tbsp
- Chopped garlic 2 tbsp
- Sliced onions 2
- Chopped tomatoes 1/2 kg
- Yogurt 200 gm
- Whole garam masala 1 tbsp
- Crushed red chili 1 tbsp
- Chopped coriander 1/2 bunch
- Chopped green chillies 3-4
- Boiled chickpeas 100 gm
- Salt to taste
Method:
- Heat oil, add onion, ginger and garlic and saute it.
- When it start browning, put tomato, yogurt, coriander, red chilli, salt, and whole garam masala.
- Once sauteed, add boiled chickpeas.
- Boil rice i separate pan
- Strain rice and add it into pan.
- When all water is absorbed, put lid on pot & seal it for 15 minutes for simmer.
- Meanwhile, chop onion, cucumber, tomato and make kachumbar salad.
- Invert rice onto plate and serve with kachumbar salad & mint chutney.
