Apple Streusel Bars by Zarnak Sidhwa

Ingredients:

  • Flour 2 cups
  • Caster sugar 1/2 cup
  • Baking powder 1/2 tsp
  • Salt 1/2 tsp
  • Butter 1 cup
  • Egg 1

For Apple Filling:

  • Caster sugar 1/2 cup
  • Flour 1/4 cup
  • Cinnamon 1 tsp
  • Apples 4 cups

For Glaze:

  • Icing sugar 2 cups
  • Milk 3 tbsp
  • Almond essence 1 tsp

Method:

  1. To prepare crust: Mix flour, sugar, salt and baking powder in medium bowl.
  2. Cut in butter with pastry blender or two knives until you have crumbs.
  3. Gently mix in beaten egg.
  4. Gently pat about 2/3 of crumb mixture onto bottom of greased dish.
  5. To prepare apple filling: Combine flour, sugar and cinnamon and toss with apples.
  6. Spread apples out on prepared crust.
  7. Sprinkle reserved crust mixture over apples evenly and baked in preheated oven for 40 minutes.
  8. When finished, allow to cool completely.
  9. To prepare glaze: Whisk together icing sugar, almond essence and enough milk to achieve desired consistency.
  10. Place glaze in plastic bag and cut off very small portion of one of corners to drizzle glaze over cooled pastry and allow to harden.
  11. Cut into bars and serve.
