Mutton Seena Masala by Chef Gulzar

Ingredients:
- Mutton breast 500 gm
- Yogurt 1 cup
- Tomatoes 3-4
- Cloves 4-5
- Cinnamon 2 sticks
- Green cardamom 4-5
- Crushed cumin 1/2 tsp
- Black pepper 1 tsp
- Ginger garlic 1 tbsp
- Oil 3-4 tbsp
- Salt to taste
- Papaya paste 2 tbsp
- Green chilies 3-4
- Fresh coriander 1/2 bunch
For Garnish:
- Green chilies 5-6
- Ginger 1 inch
Method:
- For hara masala: Add papaya paste, green chilies and fresh coriander in chopper and make paste.
- Marinate mutton breast with it and leave for 1 hour.
- For seena masala: Now put oil in pan, put cloves, cinnamon and green cardamom and roast it.
- Now add marinated mutton breast, add ginger garlic paste and roast it.
- When masala leaves oil, add cumin, black pepper, salt and yogurt and leave breast until tender.
- When meat tender and masala dries, add tomatoes and cook on high flame for 4-5 minutes until tomatoes tender.
- Dish out, garnish with green chilies and ginger and serve.
