Mutton Seena Masala by Chef Gulzar

Ingredients:

  • Mutton breast 500 gm
  • Yogurt 1 cup
  • Tomatoes 3-4
  • Cloves 4-5
  • Cinnamon 2 sticks
  • Green cardamom 4-5
  • Crushed cumin 1/2 tsp
  • Black pepper 1 tsp
  • Ginger garlic 1 tbsp
  • Oil 3-4 tbsp
  • Salt to taste
  • Papaya paste 2 tbsp
  • Green chilies 3-4
  • Fresh coriander 1/2 bunch

For Garnish:

  • Green chilies 5-6
  • Ginger 1 inch

Method:

  1. For hara masala: Add papaya paste, green chilies and fresh coriander in chopper and make paste.
  2. Marinate mutton breast with it and leave for 1 hour.
  3. For seena masala: Now put oil in pan, put cloves, cinnamon and green cardamom and roast it.
  4. Now add marinated mutton breast, add ginger garlic paste and roast it.
  5. When masala leaves oil, add cumin, black pepper, salt and yogurt and leave breast until tender.
  6. When meat tender and masala dries, add tomatoes and cook on high flame for 4-5 minutes until tomatoes tender.
  7. Dish out, garnish with green chilies and ginger and serve.
