Ingredients:
- Brinjal 4
- Fresh milk 1 cup
- Yogurt 3 cups
- Sugar 1 tsp
- Corn flour 1 tbsp
- Red chilies 1 tbsp
- Ginger garlic paste 1 tbsp
- Salt to taste
For Bhagar:
- Oil 1 cup
- Whole red chilies 6
- Curry leaves few
- Dry fenugreek leaves 4-5
- Cumin 1 tsp
Method:
- Mix yogurt, corn flour, sugar and fresh milk nicely and beat it.
- Now put brinjal slices in karahi, deep fry in hot oil, when golden brown, take it out and spread it.
- Then heat 1/2 cup oil in wide pot, put ginger garlic paste, red chilies and salt, roast it lightly and add in fried brinjal.
- Make layer of half yogurt in big and wide dish, make layer of masala brinjal and put yogurt on top.
- In end, heat oil, fry all ingredients, make bhagar and put on raita,
