Eggless Cookie by Zarnak Sidhwa

Ingredients:

  • Flour 2-1/2 cup
  • Vanilla custard powder 1/2 cup
  • Icing sugar 1/2 cup
  • Sugar 1 tbsp
  • Unsalted butter 1 cup
  • Milk or Water 2-3 tbsp

Method:

  1. Beat butter and icing sugar till smooth and creamy.
  2. Now sift in flour and custard powder and mix gently.
  3. Make smooth dough.
  4. If required you may add 1-2 tbsp of milk.
  5. Do not knead dough too much, else cookies with turn hard.
  6. Pinch small ball sized dough and make it into smooth round ball.
  7. Take sugar in plate and roll cookies dough in it so sugar sticks on all sides.
  8. Place on baking sheet and press it gently with fork to form marks.
  9. Bake at 180 degrees C for 10-12 minutes or until cookies turn slightly golden in edges.
  10. Once baked, cool them on wire rack.
  11. Cookies will look soft when hot, but will be crispy once they cool down.
  12. So do not over bake.
