Thai Red Chicken by Chef Gulzar

Ingredients:

  • Chicken with bone 500 gm
  • Coconut milk 1 cup
  • Red curry paste 2-3 tbsp
  • Fish sauce 2-3 tbsp
  • Mushroom 1 cup
  • Lemon leaves 4-5
  • Garlic 5-6 cloves
  • Black pepper 1/2 tsp
  • Crushed red chili 2-3
  • Basil leaves 10-12
  • Oil 3-4 tbsp
  • Salt to taste

Method:

  1. Heat oil in pan, put garlic cloves and chicken and roast it.
  2. When color of chicken changes, add red curry paste, fish sauce, lemon leaves, black pepper, crushed red chili, mushroom and salt and roast for 4-5 minutes.
  3. Then add coconut milk and 1 cup water and cook until gravy is thick.
  4. When gravy is thick, dish out it.
  5. Garnish with crushed red chili and basil leaves and serve.
