Colorful Paneer Rice by Zarnak Sidhwa

Ingredients:
For Paneer:
- Milk 1 liter
- Curd 1/2 kg
- Salt 1 tbsp
For Rice:
- Rice 1 cup
- Sugar 1/4 cup
- Assorted food colors few drops
- Saffron essence few drops
- Ghee 2 tbsp
- Cardamom powder 1 tsp
- Blanched almonds to garnish
Method:
- Boil earlier soaked rice in hot water till par-boiled.
- Drain rice, spread on plate to cool.
- To make paneer: Boil milk, add in curd and salt and let it separate.
- This will make few minutes.
- Immediately strain off entire liquid in wet muslin lined sieve or paneer mould and let excess liquid drain out.
- Add few drops of food colors on each side of paneer to color it.
- Set aside to cool.
- Heat ghee and add sugar and cardamom powder.
- Add the par-boiled rice. Lightly mix.
- Add in any food color to rice. Lightly mix.
- Add in saffron essence. Simmer lightly.
- Serve decorated with blanched almonds.
