Rava Upma by Zarnak Sidhwa

Ingredients:

  • Semolina 1 cup
  • Chopped onion 1
  • Green chilli 1
  • Chopped ginger 1/2 inch
  • Peas 1/2 cup
  • Green beans 1/4 cup
  • Oil 2 tbsp
  • Chana daal 1 tbsp
  • Urad daal 1/2 tbsp
  • Mustard seeds 1 tsp
  • Curry leaves 10-12
  • Cashew nuts 7-8
  • Water 2 cup
  • Lemon juice of 1 large lemon
  • Salt as required

Method:

  1. Roast semolina in pan until light brown and keep it aside.
  2. Heat oil in pan and put mustard seeds.
  3. When mustard seeds crackle, put chana daal and urad daal and fry until light brown.
  4. Now add cashew nuts and roast more for 1 minute.
  5. Then mix curry leaves, ginger and green chilli.
  6. Now add chopped onions.
  7. When color of onion changes, add green beans, peas, water and salt, cover it and cook for 5-6 minutes.
  8. Then add semolina gradually and stir it continuously.
  9. Simmer it and cook until upma is thick.
  10. Squeeze lemon juice and mix well.
  11. Serve hot with lemon wedges and coconut chutney.
