Apple Date Pie by Zarnak Sidhwa

Ingredients:

  • Flour 250 gm
  • Chilled butter 125 gm
  • Egg yolks 2
  • Water 2-3 tbsp

For Filling:

  • Apples 750 gm
  • Butter 1 tsp
  • Lemon rind 2 lemons
  • Dates 5 gm
  • Sugar 3-4 tbsp

For Glaze:

  • Egg whites 2
  • Caster sugar 1 tbsp

Method:

  1. For pastry: Sieve flour into bowl.
  2. Rub in butter until mixture resembles breadcrumbs.
  3. Bind with yolks and water.
  4. Knead lightly until smooth.
  5. Cover and chill for 30 minutes.
  6. For filling: Soften apples in butter with rind and dates.
  7. Stir in sugar. Cool.
  8. Divide pastry in half.
  9. Roll out half to line an 8 inch pie plate.
  10. Fill with apple mixture.
  11. Moisten edge with little water.
  12. Roll out remaining pastry and use to cover pie. Chill.
  13. Glaze with beaten egg and sugar.
  14. Bake at 190 degrees C for 20-25 minutes until golden in color.
  15. Serve with cream.
