Sindhi Biryani by Chef Gulzar

Ingredients:

  • Sela rice 300 gm
  • Mutton with bone 500 gm
  • Ginger garlic paste 2 tbsp
  • Yogurt 1 cup
  • Potatoes 2-3
  • Tomatoes 3
  • Onion 2
  • Red chili powder 1 tbsp
  • All spice powder 1/2 tsp
  • Turmeric powder 1 tsp
  • Cumin powder 1/2 tsp
  • Crushed black pepper 1/2 tsp
  • Cinnamon 2-3
  • Cloves 4-5
  • Black cardamom 2-3
  • Whole cumin 1 tsp
  • Black cumin 1/2 tsp
  • Orange food color 1/2 tsp
  • Fresh coriander 1/2 bunch
  • Mint 1/2 bunch
  • Green chilies 6-8
  • Ghee 1 cup
  • Salt to taste

Method:

  1. Clean rice, wash it and soak in water for 1-2 hours.
  2. Then strain it.
  3. Now put water in pot and boil it.
  4. Then add salt, oil and black cumin.
  5. When fragrance comes, add rice and boil 1/4, strain it and keep it aside.
  6. For potatoes: Put potatoes, orange food color and salt in pot, mix it nicely and boil hard.
  7. For korma: Heat oil in pan and crackle cinnamon, cloves, black cardamom and whole cumin.
  8. Then put onion and fry until golden.
  9. Now add mutton and ginger garlic paste and roast it.
  10. Now add yogurt, red chili powder, all spice powder, turmeric powder, cumin powder and crushed black pepper and cook it nicely.
  11. Then put tomatoes, mix it nicely and cook it.
  12. Then add water as required and cook until meat tender and korma is ready.
  13. Then remove it and keep it aside.
  14. For layer: First make layer of korma in pot.
  15. Now put half rice.
  16. Then put half korma and put fresh coriander, mint and green chilies.
  17. Then rice, then korma and put potatoes.
  18. Now dissolve orange food color in water and put it.
  19. In end, heat remaining ghee, put on top and simmer it.
  20. When simmer is completed, dish out it and serve.
