Ingredients:
- Sela rice 300 gm
- Mutton with bone 500 gm
- Ginger garlic paste 2 tbsp
- Yogurt 1 cup
- Potatoes 2-3
- Tomatoes 3
- Onion 2
- Red chili powder 1 tbsp
- All spice powder 1/2 tsp
- Turmeric powder 1 tsp
- Cumin powder 1/2 tsp
- Crushed black pepper 1/2 tsp
- Cinnamon 2-3
- Cloves 4-5
- Black cardamom 2-3
- Whole cumin 1 tsp
- Black cumin 1/2 tsp
- Orange food color 1/2 tsp
- Fresh coriander 1/2 bunch
- Mint 1/2 bunch
- Green chilies 6-8
- Ghee 1 cup
- Salt to taste
Method:
- Clean rice, wash it and soak in water for 1-2 hours.
- Then strain it.
- Now put water in pot and boil it.
- Then add salt, oil and black cumin.
- When fragrance comes, add rice and boil 1/4, strain it and keep it aside.
- For potatoes: Put potatoes, orange food color and salt in pot, mix it nicely and boil hard.
- For korma: Heat oil in pan and crackle cinnamon, cloves, black cardamom and whole cumin.
- Then put onion and fry until golden.
- Now add mutton and ginger garlic paste and roast it.
- Now add yogurt, red chili powder, all spice powder, turmeric powder, cumin powder and crushed black pepper and cook it nicely.
- Then put tomatoes, mix it nicely and cook it.
- Then add water as required and cook until meat tender and korma is ready.
- Then remove it and keep it aside.
- For layer: First make layer of korma in pot.
- Now put half rice.
- Then put half korma and put fresh coriander, mint and green chilies.
- Then rice, then korma and put potatoes.
- Now dissolve orange food color in water and put it.
- In end, heat remaining ghee, put on top and simmer it.
- When simmer is completed, dish out it and serve.
