Baisan Ladoo by Zarnak Sidhwa

Ingredients:

  • Ghee 3/4 cup
  • Chickpea flour 2 cups
  • Ground coconut 1/2 cup
  • Ground almonds 3 tbsp
  • Caster sugar 1/2 cup
  • Ground cardamom 1/2 tsp

Method:

  1. Heat ghee.
  2. Stir in chickpea flour and cook over low heat until chickpea flour is toasted and mixture smells fragrant, about 10 minutes.
  3. The mixture should be pasty, not powdery.
  4. Remove mixture from heat and cool slightly.
  5. Add ground almonds, caster sugar, ground coconut and ground cardamom to pan and mix thoroughly.
  6. While mixture is warm, shape into balls.
  7. Store ladoos in an airtight container and they can be eaten immediately, but taste better after several hours.
