Cheesy Lemon Flan by Shireen Anwer

Ingredients
For Base:
- Digestive biscuits 2 cups
- Melted butter 4 ounces
For Filling:
- Condensed milk 3/4 cup
- Curd cheese 1/2 cup
- Lemon juice 2 tbsp
- Lemon zest 1 tsp
- Flour 1 tbsp
- Eggs 3 separated
Method:
- Mix crush biscuits with melted butter
- Now press in 8 inch pie plate and keep aside.
- Preheat oven to 150 degrees C.
- For filling: Put condensed milk, curd cheese, lemon juice, lemon zest, flour and egg yolks in bowl and beat until thick.
- Now stiff egg whites and fold in mixture.
- Now put mixture on biscuit base and bake in preheated oven on 150 degrees C for 35-40 minutes until filling is set.
- Then cool it, decorate with fresh cream swirls and serve.
