Tikka Pulao by Rida Aftab

Ingredients:

  • Chicken 8 pieces or 1 kg
  • Basmati rice 1/2 kg
  • Bay leaves 2
  • Cardamom big 2
  • Onion 2
  • Cardamom small 4
  • Mint leaves 1 bunch
  • Oil 1/2 cup
  • Chicken stock 1-1/2 glass
  • Black cumin 1 tsp
  • Salt 1 tsp
  • Ginger garlic paste 1 tbsp
  • Whole black pepper 1/2 tsp
  • Green chili paste 2 tbsp

For Making Tikka:

  • Yellow food color 1 pinch
  • Yogurt 1/2 cup
  • Chaat masala 1 tsp
  • Red chilies 2 tsp
  • Ginger garlic paste 2 tsp
  • Roasted cumin 2 tsp
  • Salt 1/2 tsp
  • Lemon juice 4 tbsp
  • Oil 4 tbsp

Method:

  1. Mix tikka ingredients in chicken nicely and leave for 30 minutes.
  2. Now put in karahi, cook on low flame for 30 minutes and then roast on high flame.
  3. Then heat oil in pot and fry onion until brown.
  4. Then add black cumin, whole black pepper, bay leaves, small cardamom, big cardamom, ginger garlic paste and green chili paste and roast for a while.
  5. Now put rice, chicken stock and salt and cook it.
  6. When water dries, put tikkay and mint leaves and simmer it for 15 minutes.
  7. Delicious tikka pulao is ready.
