             RANGOLI DAHI BHARAY

INGREDIENTS:

INGREDIENTS FOR BHARAY:
  • Split black lentil: 1/2 kg
  • Garlic paste: 1 tsp
  • Cumin powder: 1 tsp
  • Baking soda: 1-3 tsp
  • Oil: for fry
  • Salt: to taste
FOR MASALA:
  • Red chili: 5-6
  • Black peppercorns: 1 tsp
  • Cumin: 1 tbsp
  • Black salt: 1/2 tsp
  • Salt: to taste
FOR GREEN CHUTNEY:
  • Tamarind paste: 1/2 cup
  • Mint leaves: 1/2 bunch
  • Green chilies: 5-6
  • Salt: to taste

FOR RED CHUTNEY:
  • Tomatoe paste: 1/2 cup
  • Garlic: 3-4 cloves
  • Red chili: 1 tsp
  • Salt: to taste
FOR YELLOW CHUTNEY:
  • Mayonnaise: 1/2 cup
  • Black pepper: 1 tsp
  • Mustard paste: 2 tbsp
  • Cream: 1/2 tsp
  • Lemon juice: 2 tbsp
FOR GARNISHING:
  • Yogurt: 1/2 kg
  • Chaat masala:1 tsp

METHOD:

  1. Add baking soda in black lentil and leave for one night in water , now add in grinder and chop.
  2. Now add garlic paste, cumin powder and salt in it.
  3. Now heat oil in a pan and fry this material in pakora shape.
  4. For making masala of dahi bharay add green chilies, black pepper, cumin seed, black salt, salt in a chopper and chop.
  5. For making green chutney, add all green chutney ingredients in a blender and blend.
  6. For making red chutney add all red chutney ingredienys in a blender and blend.
  7. For making yellow chutney add all yellow chutney ingredients in a mixing bowl and mix.
  8. Now in a deep bowl add yogurt and water and stir well.
  9. Now add bharay in it then add green, red and yellow chutney on it and garnish dahi bharay masala on it,
  10. Now sprinke chaat masala on it and serve.

                 GULAB  JAMUN

INGREDIENTS:

FOR GULAB JAMUN:
  • Dry milk: 2 cups
  • Flour: 2 tbsp
  • Baking powder: 1 tsp
  • Eggs: 2
  • Clarified butter: 2 tbsp
  • Pistachio: to garnish
FOR SUGAR SYRUP"
  • Sugar: 1/2 kg
  • Kewra essence: few drops

METHOD:

FOR MAKING SUGAR SYRUP:
  1. In a pan add sugar and water and cook until thicker, now add kewra essence in it and remove from stove.
FOR MAKING GULAB JANUM:
  1. In a mixing bowl add dry milk, flour, baking powder, clarofied butter, eggs, and make dough of it now give small round shape to it.
  2. Now heat clarified butter in a pan and fry round dough in it.
  3. Now add them in to sugar syrup.
  4. Garnish with pistachio and serve.
