Aloo ky samosay

Ingredients:

For the dough:
  • Flour 1/2 kg
  • ghee 1 cup
  • water 2 cup
  • salt 1/4 tsp
  • carom seeds 1/3 tsp
For filling:
  • Potato 1/2 kg 
  • salt to taste
  • ginger garlic paste 1 tsp
  • crushed chilli 1/2 tsp
  • turmeric 1/4 tsp
  • cumin seeds 1/2 tsp 
  • whole coriander 12 tsp
  • coriander 1/2 bunch
  • green chilli 3 pcs

Method:

For the dough:
  1. In a bowl mix together ghee,water ,salt and carom seeds.
  2. Add in flour , make a dough and make small balls
  3. Now make roti's out of the dough ball by flattening them and cut them from the middle
For the filling:
  1. Heat oil and sauté onions 
  2. Then add in salt,crushed red chillies, turmeric, ginger garlic paste, coriander and mix
  3. In the end add mashed boiled potatoes, dried coriander, cumin and mix
  4. Make the samosa's as shown in the video and fry in hot oil. when they are golden brown take them out and serve.

Khajla


Ingredients:

  • Flour 1 kg
  • ghee for frying 1 kg
  • corn flour 50 gm
  • ghee 200 gm

Method:

  1. Add salt in flour and knead it hard.Then flatted it out with a rolling pin
  2. Take corn flour, ghee  and 2 tbsp of flour mix together and make a thick paste
  3. The flour that you have flattened pour this thick paste on top and roll.
  4. Now make small balls and fold from one side and keep it for 15 minutes
  5. In the end flatten it out again like you would do a roti and fry them
  6. Khajla is ready
