Strawberry Cheesecake Ice Cream by Zarnak Sidhwa

Ingredients:

  • Cream cheese (softened) 8 oz
  • Sweetened condensed milk 1 can (14 oz)
  • Cream 1/3 cup
  • Grated lemon zest 2 tsp
  • Strawberries 1-1/2 cups
  • Plain biscuits (coarsely chopped) 3

Method:

  1. Beat cream cheese, sweetened condensed milk, cream and lemon zest with mixer until well blended.
  2. Pour into an airtight box and freeze until almost solid, about 4 hours.
  3. Puree strawberries in blender until smooth.
  4. Beat frozen cream cheese mixture with mixer until creamy.
  5. Add strawberries to cream cheese mixture along with biscuit crumbs and stir with spoon to combine.
  6. Return ice cream to air tight container and freeze until firm, about 8 hours or so.
  7. Remove ice cream from freezer about 15 minutes before serving and let stand at room temperature to soften slightly.
