Aloo Meethi Ki Sabzi by Zubaida Tariq

Ingredients:

  • Chopped potatoes 1/2 kg
  • Fresh fenugreek 8 bunches
  • Chopped green chilies 4
  • Whole red chilies 8
  • Chopped garlic cloves 6
  • Turmeric 1 tsp
  • Salt to taste
  • Butter 1 tbsp
  • Mustard oil 1 cup

Method:

  1. Clean fresh fenugreek, wash it nicely and soak in water with some turmeric so that bitterness finishes.
  2. Now heat oil in wok and fry garlic cloves until golden brown.
  3. Then put potatoes cubes and salt.
  4. When potatoes tender, little brown in color, then put fenugreek, green chilies, red chilies, salt and turmeric and cover it.
  5. When water of fenugreek dries, add butter and keep on simmer on low flame.
  6. Aloo meethi ki sabzi is ready.
