Crusted Chicken by Zarnak Sidhwa

Ingredients:

  • Chicken drumsticks 1 kg
  • Milk 1/2 cup
  • Lemon juice of a lemon
  • Grated onion 2 tbsp
  • Crushed garlic 1 tbsp
  • Black pepper 1/4 tsp
  • Salt a pinch
  • Panko breadcrumbs 3/4 cup
  • Parmesan cheese (grated) 1 ounce
  • Chopped greens onions 2 tbsp

For Sauce:

  • Mayonnaise 2 tbsp
  • Plain yogurt 2 tbsp
  • Honey 1-1/2 tsp
  • Mustard 1-1/2 tsp
  • Dijon mustard 1/2 tsp

Method:

  1. Mix lemon juice and milk and let it turn to buttermilk.
  2. Place buttermilk, onion, garlic, and drumsticks in box and refrigerate for 1 hour.
  3. Discard marinade. Sprinkle the drumsticks with pepper and salt.
  4. Combine breadcrumbs, cheese and spring onion greens in dish.
  5. Dredge each drumstick in panko mixture.
  6. Arrange drumsticks in single layer on greased oven rack.
  7. Bake drumsticks at 250 degrees C for 30 minutes or until chicken is done.
  8. Combine mayonnaise, dijon mustard, mustard, honey and yogurt in small bowl.
  9. Serve sauce with chicken.
