Crusted Chicken by Zarnak Sidhwa

Ingredients:
- Chicken drumsticks 1 kg
- Milk 1/2 cup
- Lemon juice of a lemon
- Grated onion 2 tbsp
- Crushed garlic 1 tbsp
- Black pepper 1/4 tsp
- Salt a pinch
- Panko breadcrumbs 3/4 cup
- Parmesan cheese (grated) 1 ounce
- Chopped greens onions 2 tbsp
For Sauce:
- Mayonnaise 2 tbsp
- Plain yogurt 2 tbsp
- Honey 1-1/2 tsp
- Mustard 1-1/2 tsp
- Dijon mustard 1/2 tsp
Method:
- Mix lemon juice and milk and let it turn to buttermilk.
- Place buttermilk, onion, garlic, and drumsticks in box and refrigerate for 1 hour.
- Discard marinade. Sprinkle the drumsticks with pepper and salt.
- Combine breadcrumbs, cheese and spring onion greens in dish.
- Dredge each drumstick in panko mixture.
- Arrange drumsticks in single layer on greased oven rack.
- Bake drumsticks at 250 degrees C for 30 minutes or until chicken is done.
- Combine mayonnaise, dijon mustard, mustard, honey and yogurt in small bowl.
- Serve sauce with chicken.
