Brownie Pudding by Zarnak Sidhwa

Ingredients:

  • Flour 1 cup
  • Caster sugar 3/4 cup
  • Cocoa powder 2 tbsp
  • Baking powder 2 tsp
  • Salt 1/4 tsp
  • Milk 1/2 cup
  • Oil 2 tbsp
  • Vanilla essence 1 tsp
  • Chopped walnuts 1/2 cup
  • Packed brown sugar 3/4 cup
  • Cocoa powder 1/4 cup
  • Boiling water 1-1/2 cups
  • Vanilla ice cream (optional) to serve

Method:

  1. Stir together flour, caster sugar, 2 tablespoons cocoa powder, baking powder and salt.
  2. Stir in milk, oil, and vanilla. Stir in walnuts.
  3. Pour batter into greased 8-inch square pan.
  4. In small bowl stir together brown sugar and 1/4 cup cocoa powder.
  5. Stir in boiling water.
  6. Slowly pour brown sugar mixture over batter.
  7. Bake in preheated oven for 40 minutes.
  8. Transfer to wire rack and cool for 45 to 60 minutes. Serve warm.
  9. Spoon cake into dessert bowls and spoon pudding from bottom of pan over cake.
  10. Serve with vanilla ice cream.
