Ingredients:
For Peanut Butter Dough:
- Flour 1-3/4 cup
- Baking powder 1/4 tsp
- Caster sugar 1/2 cup
- Butter 1/2 cup
- Creamy peanut butter 3 tbsp
- Egg 1
- Vanilla essence 1/2 tsp
- Salt 1/2 tsp
For Chocolate Dough:
- Flour 1-2/3 cups
- Baking powder 1/2 tsp
- Unsalted butter 1/2 cup
- Caster sugar 1/2 cup
- Melted chocolate 2 tbsp
- Cocoa powder 1/4 cup
- Vanilla essence 1/2 tsp
- Egg 1
- Salt 1/4 tsp
Method:
- To make peanut butter dough: In bowl, mix cream, butter, peanut butter and sugar till light and fluffy.
- Add vanilla essence, egg and salt and mix.
- In another bowl, sift flour and baking powder.
- Add flour to butter mixture and make a smooth soft dough.
- Wrap dough in plastic and chill for 2 hrs.
- Next prepare the chocolate dough: In bowl, cream sugar, butter and melted chocolate till smooth and fluffy.
- Add vanilla essence, egg and salt and mix.
- In another bowl, sift flour, cocoa powder and baking powder.
- Add flour mixture to the butter mixture and make a smooth soft dough.
- Wrap dough in plastic and chill for 2 hours.
- Take chilled doughs and roll each of the dough to 1/4 inch thick rectangle.
- Cut each rectangle into half.
- Take one half each of chocolate and peanut butter dough, place chocolate rectangle on top of peanut butter rectangle and fold dough in half and then in half again.
- Flatten dough and again fold in half and flatten again to 1/4 inch thickness and roll into a log.
- Wrap log in plastic and chill for 2 hours.
- Repeat same process with rest of the other half of chocolate and peanut butter dough.
- Slice log into 1/4 inch thick slices and place them 1 inch apart on a baking sheet.
- Bake for 11-12 minutes at 180 degrees C or till the bottom of cookie is golden brown.
- Cool for 5 minutes before transferring to wire rack to cool completely.
