Batair Pulao, Batair Yakhni And Hallawa by Chef Gulzar

                   BATAIR PULAO

INGREDIENTS:

  • Quail: 4-6
  • Red chili powder: 2 tbsp
  • Black pepper: 1 tsp
  • Corinader powder: 1.2 tsp
  • Ginger Garlic paste: 2 tbsp
  • Gram flour: 3-4tbsp
  • Coriander: 1/2 bunch
  • Green chilies: 2-3
  • Mint leaves: 1/.2 bunch
  • Yogurt: 1/2 cup
  • Orange food color: 1 pinch
  • Clarified butter: for fry
FOR PULAO:
  • Sela rice: 500 gm
  • Yogurt: 250 gm
  • Onion: 2
  • Green chiles: 2-3
  • Ginger garlic paste: 2/3 tbsp
  • Bay leaves: 2-3
  • Cloves: 4-5
  • Black cardamom: 3-4
  • Cinnamon: 2-3 sticks
  • Cumin seeds: 1 tsp
  • Black pepper: 1 tsp
  • Clarified butter: 1/2 cup
  • Salt: to taste

METHOD:

TO COOK QUAIL:
  1. Clean quail nd add yogurt in it and leave for some time.
  2. Now make paste by adding coriander, mint leaves and green chilies.
  3. Now in a mixing bowl add this paste, red chili, black pepepr, corinader powder, ginger garlic paste, caradamom and food color and mix all.
  4. Now add quail in it and leave for marination.
TO COOK PULAO:
  1. In a pan add clarified butter and brown onion in it and leave seperately.
  2. Now add bay leaves, cinnanmon sticks, cardamoms, cloves, cumin seeds,  in the same pan and fry.
  3. Now add marinated quail in it and cook with ginger garlic paste.
  4. Now add water to cook the quail, When the quail is cooked drian it seperatelt and waste all spices,
  5. Now in a pan heat chicken stock and fry onion in it, now ow add  green chili, black pepper, red chili and salt and cook .
  6. At the end add quail and rice in it and cook on a light flame.
  7. Dish out and serve hot.

                   BATAIR YAKHNI

INGREDIENTS:

  • Quail:4-5
  • Ginger garlic paste: 2tbsp
  • Onion: 1
  • Red chili paste: 1 tbsp
  • Turmeric paste:2-3 tbsp
  • Yogurt: 1/2 cup
  • Whole all spice: 1/2 cup
  • All spice powder: 1/2 tsp
  • Oil: 2tbsp
  • Salt: to taste

METHOD:

  1. Marinate quail with yogurt.
  2. Heat oil in a pan and fry whole all spices in it, now fry onion and ginger garlic paste in it.
  3. Now add quail in it, and add salt, turmeric powder, red chili powder and cook.
  4. Now add required amount of water to make stock.
  5. Add the end sprinkle all spice powder and dish out.

                         HALLAWA

INGREDIENTS:
  • Sesame seeds: 500 gm
  • Semolina: 500 gm
  • Cinnamon: 2 sticks
  • Green cardamoms: 3-4
  • Cloves: 5-6
  • Milk: 500 gm
  • Sugar: 1 cup
  • Clarified butter: 1 cup

METHOD:

  1. In a dry pan fry seasame seeds and meke paste of it.
  2. Now fry semolina and keep seperated.
  3. In a pan heat clarified butter and add cloves. cardamoms, cinnamons and cook.
  4. Now add semolina ,sesame seeds paste, sugar milk and cook .
  5. When oil starts to come out dish out and serve.
