Chilled Coffee Dessert by Zarnak Sidhwa

Ingredients:

  • Caster sugar 3/4 cup
  • Gelatin powder 2 tbsp
  • Coffee 3 cups
  • Water 1-1/3 cups
  • Lemon juice 1 tbsp
  • Whipped cream (for garnish) 1 cup

Method:

  1. In saucepan, stir together sugar and gelatin.
  2. Mix in hot coffee and water.
  3. Cook over low heat, stirring frequently until gelatin and sugar have completely dissolved.
  4. Remove from heat, and stir in lemon juice.
  5. Pour into mold.
  6. Refrigerate until set, at least 6 hours or overnight.
  7. Serve with whipped cream.
