Chilled Coffee Dessert by Zarnak Sidhwa

Ingredients:
- Caster sugar 3/4 cup
- Gelatin powder 2 tbsp
- Coffee 3 cups
- Water 1-1/3 cups
- Lemon juice 1 tbsp
- Whipped cream (for garnish) 1 cup
Method:
- In saucepan, stir together sugar and gelatin.
- Mix in hot coffee and water.
- Cook over low heat, stirring frequently until gelatin and sugar have completely dissolved.
- Remove from heat, and stir in lemon juice.
- Pour into mold.
- Refrigerate until set, at least 6 hours or overnight.
- Serve with whipped cream.
