Fruit N Nut Cookies by Zarnak Sidhwa

Ingredients:
- Flour 1 cup
- Corn flour 2 tbsp
- Butter (softened) 1/2 cup
- Caster sugar 1/2 cup
- Salt a pinch
- Vanilla essence 1/2 tsp
- Cardamom or clove powder 1/4 tsp
- Lemon zest 1/4 tsp
- Finley chopped raisins 1/4 cup
- Dried cranberries 1/4 cup
- Finley chopped pistachios 1/4 cup
- Finely chopped almonds 1/4 cup
Method:
- In bowl, add softened butter, caster sugar and salt and beat till light and fluffy.
- Add vanilla essence, cardamom or cloves powder and lemon zest and mix well.
- Add flour and corn flour and mix to make soft dough.
- Add finely chopped dried fruits and nuts and mix well.
- Place soft dough in between two sheets of cling or greaseproof paper and shape it into a log.
- Wrap log with plastic wrap and seal ends.
- Again wrap it in aluminum foil and freeze for 1 hour or until it hardens.
- Before baking, unwrap and slice dough into 1/4 inch slices and place on an aluminum foil lined baking sheet.
- Place them at least 1 inch apart as they expand on baking.
- Bake at 160 degrees C for 13-15 minutes or until lightly browned around edges.
- Remove from oven and cool on wire rack.
- The cookies will be soft on touch after baking and will harden once it is out of the oven and cools down.
