Moussaka In Crepes by Zarnak Sidhwa

Ingredients:

For Crepes:

  • Flour 1/2 cup
  • Egg 1
  • Butter 1 tbsp
  • Milk 1 cup
  • Cheese sauce 1 cup

For Filling:

  • Brinjal (diced) 1 small
  • Salt to taste
  • Oil 2 tbsp
  • Minced mutton 250 gm
  • Butter 4 tbsp
  • Onions 6
  • Dried oregano 1/2 tsp
  • Crushed garlic 1 clove
  • Tomatoes (blanched, peeled & chopped) 2
  • Tomato paste 2 tsp
  • Black pepper powder to taste
  • Fresh breadcrumbs 1/2 cup
  • Parmesan cheese (grated) 2 tbsp

Method:

  1. Sift flour into bowl.
  2. Add egg, 1 tbsp melted butter and 2 tbsp of milk. Beat until smooth.
  3. Add remaining milk little by little and set aside for 30 minutes.
  4. Heat non-stick pan on medium heat, lightly grease with butter and pour 2- 3 tbsp of batter into pan. Rotate pan so that batter spread all around.
  5. Cook slowly until set and lightly browned underneath.
  6. Turn and brown other side too.
  7. Remove crepes and set aside on plate.
  8. Repeat with remaining batter.
  9. Keep crepes warm. Preheat oven to 180 degrees C.
  10. Sprinkle brinjal pieces with 1 tsp salt and set aside for 30 minutes.
  11. Rinse under cold water and drain on kitchen paper.
  12. Heat oil in pan, add minced mutton and cook stirring.
  13. Remove from pan and set aside.
  14. Melt butter in same pan.
  15. Add brinjal, onions, oregano and garlic and cook.
  16. Add tomatoes, tomato paste and black pepper powder. Transfer into a bowl and add minced mutton, breadcrumbs, parmesan cheese and 1/2 cup of cheese sauce and mix thoroughly. Adjust seasoning. Place 2 tbsp of filling on one end of each crepe, roll up, tucking in sides.
  17. Repeat with remaining mixture and remaining crepes.
  18. Arrange crepes in shallow ovenproof dish.
  19. Pour over remaining cheese sauce, and bake, uncovered, in preheated oven for 15 minutes.
  20. Remove from oven and serve warm.
