Bread Sticks by Zarnak Sidhwa

Ingredients:

  • Flour 1 cup
  • Salt 1/2 tsp
  • Yeast 10 gm
  • Sugar 1/2 tsp
  • Ghee 1-1/4 tsp
  • Egg 1
  • Sesame seeds as required
  • Onion seeds as required
  • Poppy seeds as required
  • Oil for greasing

Method:

  1. Place yeast and sugar in cup.
  2. Pour lukewarm water over this and cover. Let it rise for five to seven minutes.
  3. Sift flour and salt together.
  4. Place in  large mixing bowl.
  5. Make well in center of flour and place yeast liquid into well in flour and mix.
  6. Rub in softened ghee and knead lightly for about 10 minutes to form a smooth but fairly firm dough, using extra water if needed.
  7. Cover with a moist cloth and rest until doubled in size.
  8. Knock back dough, allow it to rest further for 10 minutes and then roll it into rectangle about 1/4 inch thick on lightly floured work surface.
  9. Preheat oven to 230°C.
  10. Cut rolled dough into 1 cm by 8 cm strips.
  11. Take individual strips and roll into 10 to 12 cm long sticks.
  12. Place them on greased baking tray.
  13. If using egg, beat it with fork lightly.
  14. Brush bread sticks with egg and sprinkle with sesame seeds or onion seeds or poppy seeds.
  15. Bake in preheated oven for 15 minutes and then reduce temperature to 190°C for another 10 minutes.
  16. Remove, cool and store in air-tight container.
