Crunchy Top Cake by Zarnak Sidhwa

Ingredients:
- Flour 1-1/2 cups
- Baking powder 1-1/2 tsp
- Caster sugar 6 tbsp
- Salt 1/2 tsp
- Butter 1/3 cup
- Milk 1/2 cup
- Egg 1
- Vanilla essence 1/2 tsp
- Butter (melted) 2 tbsp
- Brown sugar 1/2 cup
- Flour 2 tbsp
- Ground cinnamon 1/2 tsp
Method:
- Mix together flour, baking powder, sugar and salt.
- Cut in butter with pastry blender or two knives till crumbs form.
- Beat egg, then stir in milk and vanilla.
- Add egg-milk mixture to flour mixture all at once.
- Stir carefully until just blended.
- Pour batter into greased and floured 9-inches square pan and spread evenly.
- Drizzle top with melted butter.
- In small bowl mix together brown sugar, 2 tbsp flour and 1/2 tsp cinnamon.
- Sprinkle on top of cake.
- Bake in preheated oven at 220 degrees C for 15 to 20 minutes, or until a toothpick inserted into center of cake comes out clean.
