Malaysian Coconut Rice by Rida Aftab

Ingredients:

  • Boiled rice 1/2 kg
  • Coconut milk 1 tin
  • Parsley or Green coriander 1 bunch
  • Capsicum 1
  • Bay leaves 1
  • Green onions 250 gm
  • Salt 1 tsp
  • Black pepper 1 tsp
  • Cumin 2 tsp
  • Lemon grass 2 tbsp
  • Oil 4 tbsp

Method:

  1. Heat oil in pan.
  2. Now do flame low and put coconut milk, cumin, bay leaves and salt.
  3. When it boils, add capsicum, green onion and rice and mix it.
  4. Then put lemon grass, black pepper, parsley or green coriander and mix it.
  5. Then close stove after 5 minutes.
  6. Malaysian coconut rice is ready.
