Paneer Nuggets by Zarnak Sidhwa

Ingredients:
- Cottage cheese (grated) 200 gm
- Chopped coriander leaves 1 tbsp
- Turmeric powder 1/2 tsp
- Cumin powder 1/4 tsp
- Coriander powder 1/4 tsp
- Salt to taste
- Chaat masala 1/4 tsp
- Red chilli powder 1/2 tsp
- Lemon juice 1 tbsp
- Sugar 1/2 tsp
- Flour 4 tbsp
- Black pepper powder to taste
- Bread crumbs 1/2 cup
- Oil for deep frying + 1/4 cup
Method:
- Put grated cottage cheese, turmeric powder, cumin powder, coriander powder, salt, chaat masala, red chilli powder, lemon juice, sugar and coriander leaves into bowl and mix well.
- Mix flour, salt and black pepper powder in another bowl, add sufficient water and mix well to make smooth thick batter.
- Spread breadcrumbs on a plate, add salt and black pepper powder and mix well.
- Heat sufficient oil in wok.
- Divide cottage cheese mixture into small equal portions and shape them into nuggets.
- Dip them in batter, roll in spiced breadcrumbs and deep fry in hot oil till golden brown.
- Drain on absorbent paper.
- Serve hot.
