Ravioli With Cream Sauce by Chef Gulzar

Ingredients:

For Ravioli Strips:

  • Flour 250 gm
  • Eggs 2
  • Salt to taste

For Filling:

  • Chicken mince 250 gm
  • Garlic paste 1 tsp
  • Black pepper 1/2 tsp
  • White pepper 1 tsp
  • Carrots 1/2 cup
  • Spring onion 1
  • Onion 1
  • Eggs 1-2
  • Oil as required
  • Salt to taste

For Cream Sauce:

  • Flour 3-4 tbsp
  • Chicken stock 1 cup
  • Milk 1 cup
  • Butter 1/2 cup
  • Mushrooms 4-5
  • Boiled garlic 4-5 cloves

Method:

  1. For ravioli strips: Add eggs and salt in flour and knead hard dough.
  2. Now roll it and keep it aside.
  3. For cream sauce: Put butter in pan, put flour and roast for 2-3 minutes.
  4. Now add stock, garlic and mushrooms and roast again for 2-3 minutes.
  5. Now add milk and stir it.
  6. When thick, remove it.
  7. For filling: Add all ingredients in mixing bowl and mix it.
  8. Keep filling in strips at all place.
  9. Keep second strip on top, spread egg and close it.
  10. Cut into your required shape.
  11. Heat water in pot and boil ravioli for 6-10 minutes.
  12. Strain water and keep ravioli aside.
  13. In end, put keep ravioli in serving dish, then put cream sauce and serve.
