SOY POACH CHICKEN INGREDIENTS: Chicken boneless: 300 gm Ginger garlic: 1 tbsp Spinach: 500 gm Red chili: 4-5 Lemon leaf: 2 -3 Soya sauce: 2tbsp Stock: 1/2 litre Boranga: 1 piece Black pepper: 1 tsp Seasame seed: 1 tbsp Spring onion: 2-3 strands Chinese salt: 1/2 tsp Seasame seed oil: 1 tsp Oil: 2 tbsp Salt: to taste METHOD: Fry seasame seeds and seasame oil in a pan and put in seperately. Now in the same pan fry oil and ginger garlic,now add boneless chicken and fry. Now add spinach, salt, soya sauce, black pepper, chinese salt and red chilies and mix all together. Now add stock, boranga and lemon leaf and cook. When chicken starts to cook then add seasame oil mixture in it and cook. At the end spring onions in it and dish out. VEGETABLE AND COCONUT RICE INGREDIENTS: Sela rice boiled: 300 gm Mixed vegetables: 500 gm Chopped onion: 1 Garlic chopped: 1 tbsp Black pepper: 1 tsp Coconut milk: 1 cup Green chiles: 3-4 Chicken stock: as required Spring onions: 2-3 Coconut: 1/2 cup Oil: 2-3 tbsp Salt: as required METHOD: Half boiled sela rice. Now in a pan heat oil and fry onion and garlic paste in it, now add mix vegetables and salt in it and cook, now mix chicken stock in it. When it starts to boiling add rice and coconut milk in it. When vegetables starts to cook add grated coconut and green onions in it and serve. SWEET CHILI SAUCE INGREDIENTS: Kashmiri chili: 5-6 Garlic: 5-6 cloves Vinegar: 1/2 cup Sugar: 1/2 cup Salt: to taste METHOD: In a pan boil kasmiri chiles, garlic and vinegar and the grind it. In a pot add water, sugar and salt and cook until thick then preserve it in a bottle.
