Pepper Coconut Chicken by Zarnak Sidhwa

Ingredients:

  • Chicken cut into pieces 1 kg
  • Pepper powder 3 tbsp
  • Crushed garlic 3-4 cloves
  • Chopped ginger a small piece
  • Desiccated coconut 1/4 cup
  • Unsalted butter 2 tbsp
  • Cinnamon 2 sticks
  • Cloves few
  • Cardamom seeds few
  • Tomatoes 2 small
  • Coriander powder 2-3 tsp
  • Onions 2 medium
  • Chilli powder 1 tsp
  • Turmeric powder 1/4 tsp
  • Cumin seeds powder 1 tsp
  • Coriander leaves to garnish
  • Salt to taste

Method:

  1. Smear 2 tbsp of pepper powder and salt on chicken pieces.
  2. Pier chicken pieces with a fork and let chicken marinate for few hours.
  3. Heat butter in pan and saute or shallow fry chicken pieces one by one.
  4. Keep fried chicken pieces aside.
  5. In same pan add some more butter and fry sliced onions, cardamoms, ginger, garlic, cloves and cinnamon.
  6. When onions are brown, add coriander powder, chilli powder, turmeric, cumin powder and saute.
  7. Add coconut and tomatoes and keep frying. Do not add water.
  8. Now add 1 tbsp pepper powder and fry for a minute.
  9. Add water, enough to get a thick paste.
  10. Drop fried chicken pieces into the gravy. Add salt.
  11. Let simmer till chicken is well mixed with pepper masala.
  12. Garnish with coriander leaves.
