Vegetable Calzone by Zarnak Sidhwa

Ingredients:

  • Pizza dough 1
  • Grated cheese 1/2 cup
  • Mixed Italian herbs as required
  • Chilli flakes as required

For the Filling:

  • Carrot (peeled and chopped) 1
  • Corn 1/2 cup
  • Chopped capsicum 1/2 cup
  • Onion (thinly sliced) 1
  • Chopped tomatoes 2
  • Sugar 1 tsp
  • Chilli flakes 1 tsp
  • Dried basil 1 tsp
  • Oil 2 tbsp
  • Salt to taste

Method:

  1. For filling: Heat oil.
  2. Add onions and saute till translucent.
  3. Add chopped tomatoes and sugar.
  4. Cook till tomatoes are done.
  5. Now add all vegetables and saute well.
  6. Add 1/2 cup water and cook till water is absorbed and vegetables are half cooked.
  7. Add salt, chilli flakes and mix well.
  8. Remove from flame, add basil and set aside.
  9. To make the calzone pockets: Take raised pizza dough and punch back and knead well.
  10. Make 4 equal sized balls.
  11. Roll portion into a circle.
  12. Spread filling in one half.
  13. Add grated cheese.
  14. Close with other half, seal edges and press with a fork.
  15. Transfer gently to a greased and floured baking sheet.
  16. Bake at 180 degrees C for 18-20 minutes till the top turns golden brown.
  17. Serve hot.
