Indonesian Rice by Zarnak Sidhwa

Ingredients:
- Rice (boiled and cooled) 3 cups
- Boneless chicken (thin strips) 250 gm
- Eggs 3
- Oil 2 tbsp
- Chopped onion 1
- Chopped green chillies 2
- Chopped garlic 2 cloves
- Chopped spring onion 1
- Coriander seeds 1 tsp
- Cumin powder 1 tsp
- Prawns 250 grams
- Soya sauce 3 tsp
- Salt to taste
Method:
- Break eggs in bowl, add salt and whisk well.
- Heat oil, add eggs and make omelets.
- Slice into thin strips and set aside.
- Heat oil in wok, add onions, green chillies, garlic, and spring onion. Saute quickly.
- Add coriander seeds and cumin powder.
- Saute for 2 minutes, add chicken strips and cook till done.
- Add prawns add saute quickly.
- Add cooked rice, omelet strips, soya sauce and salt.
- Toss well and stir fry quickly.
- Serve hot.
