RAGDA PATTIES
INGREDIENTS:
FOR PATTIES:
Boiled potatoes: 2-3
Garlic paste: 1 tsp
Crushed red chili: 1 tsp
Black pepper: 1/2 tsp
Corn flour: 1 tbsp
Oil: as required
Salt: to taste
FOR RAGDA:
Yellow gram bengal: 1/2 cup
Chick peas: 300gm
yogurt: 1 cup
Ginger garlic paste: 2 tbsp
Green chilies: 6-7
Dry fenugreek leaves: 2 tsp
All spice powder: 1/2 tsp
Soda: 1/2 tsp
Coriander powder: 1 tsp
Whole all spice: 2 tsp
FOR GARNISH:
Chopped tomatoes: 1
Chopped onions: 1
Lemon juice: 1 tbsp
Chat masala: 1 tsp
yogurt: as required
Tamarind chutney: as required
Coriander cabbage: as required
Soye: or decoration
METHOD:
FOR PATTIES:
In a mixing bowl add boiled potatoe, garlic paste, red chili, black pepper, corn flour and salt and mix all together and mash them.
Now heat oil in a pan ary this batter, keep seperated.
FOR RAGDA:
Dip yellow gram bengal for whole night in water.
Now add 2 jug water in it and put on stove to cook, now add chic peas in it and cook all together.
FOR MAKING STROKE:
In a pan cook oil, yogurt, chicken garlic paste, green chilies, all spice powder, soda, coriander and grind red chili.
When this material is cooked add this in chic peas and cook or 5 to 10 minutes.
Now in a plate add batter and add ragda in it , then add yogurt, coriander, taramind, corinader cabbage, onion, tomatoe, lemon juice and chat masala and serve.
CHICKEN KHATI ROLL
INGREDIENTS:
FOR PARATHAS
All purpose flour: 2 cups
Carom seeds: 1/2 tsp
Onion seeds: 1/2 tsp
Clariied butter: 2 tbsp
Oill: for frying
Salt: to taste
FOR FILLING:
Boneless chicken: 1/2 kg
Cabbage: 1 cup
Onion: 1
Ginger Garlic paste: 1 tbsp
Capsicum(sliced): 1
Carrot(sliced): 1
Chat masala: 1/2 tsp
Lemon juice: 2 tbsp
Soya Sauce: 2 tbsp
Oregano: 1 pinch
Green chilies: 4-5
Onion(sliced): 1
Spring onion: 1/2 cup
Chopped Garlic: 1 tbsp
Black pepper: 1 tsp
Red chili powder: 1 tsp
Oil: 2-3 tbsp
Salt: to taste
METHOD:
FOR MAKING PARATHA:
In a mixing bowl add all purpose flour, carom seeds, onion seeds, clarified butter and salt and make dogh by adding water in it.
Now make chapati shape of it fry them and keep seperate.
FOR MAKING FILLING:
Heat oil in a pan and ry ginger garlic paste in it, then fry onion in it and add chicken strips in it.
When chicken color starts to chnage then add cabbage, capsicum, carrot, green chili, garlic, chat masala , soya sauce, chopped red chili and salt in it and cook all together. then add lemon juice and oregano.
Now put this cooked material on parathas and roll them.
JAY PORI CHAAT
INGREDIENTS:
Boiled chickpeas: 300 gm
Boiled potatoes: 2
Yogurt: 1 cup
Papri: 5-6
Green chilies: 3-4
Chat masala: as required
FOR GREEN CHUTNEY:
Tmarind paste: 1/2 cup
Mint Leaves: 1 bunch
Green chilies: 5-6
Salt: to taste
METHOD:
FOR MAKING GREEN CHUTNEY:
Grind tamarind, mint leavesn green chilies and sali in grinder.
FOR SERVING:
In a deep serving disd add chick peas and boiled potatoes.
Now add yogurt then add green chutney on it.
Serve by adding chat masala, pari and green chilies.
