                       TAWA SABZI

INGREDIENTS:

  • Mix vegetables- 700 gm
  • Chopped garlic- 4-5 cloves
  • Chopped onion- 2
  • Tomatoes- 3
  • Black pepper- 1 tsp
  • Red chili flakes- 1 tsp
  • Cumin seeds- 1 tsp
  • Coriander seeds- 1 tsp
  • Black cardamoms- 3-4
  • Cinnamon- 2-3 sticks
  • Cloves- 4-5
  • Turmeric powder- 1 tsp
  •  Green chilies- 5-6
  • Coriander- 1/2 bunch
  • Chopped ginger- 1 inch piece
  • Olive oil- 2 tbsp
  • Salt- to tatse

METHOD:

  1. Fry olive oil and all spice powder on an iron pan, then add onion and garlic cloves in it.
  2. When onion starts to brown grill mix vegetables in it, then add red chili powder, cumin seed, black pepper, coriander seeds, turmeric powder and tomatoes and stir well.
  3. When all material is mix together add 5-6 green chilies it it and dish out.
  4. Garnish with garlic and coriander.

                     MAKAI KI KHICHRI

INGREDIENTS:

  • Corns- 1/2 cup
  • Red bengal gram- 1/2 cup
  • Rice- 100 gm
  • Mustard Seed- 1/2 tsp
  • Cumin seed- 1/2 tsp
  • Green chilies- 2-3
  • Sugar- 1 tsp
  • Lemon juice- 1 tbsp
  • Wild parsnip- as required
  • Curry leaves- 2-3 leaves
  • Coriander- 1/2 bunch
  • Oil- 2 tbsp
  • Salt- to taste

METHOD:

  1. Chopped the corns. 
  2. Infused Red Bengal gram and rice.
  3. Now in a pan heat oil and add curry leaves, mustard seed, cumin seeds and green chilies.
  4. Now add corn, salt and sugar in it. 
  5. Now add water ,wild parsnip, Bengal gram and rice and cook all together, at the end add lemon juice.
  6. Dish out and serve with coriander garnishing.
