TAWA SABZI
INGREDIENTS:
Mix vegetables- 700 gm
Chopped garlic- 4-5 cloves
Chopped onion- 2
Tomatoes- 3
Black pepper- 1 tsp
Red chili flakes- 1 tsp
Cumin seeds- 1 tsp
Coriander seeds- 1 tsp
Black cardamoms- 3-4
Cinnamon- 2-3 sticks
Cloves- 4-5
Turmeric powder- 1 tsp
Green chilies- 5-6
Coriander- 1/2 bunch
Chopped ginger- 1 inch piece
Olive oil- 2 tbsp
Salt- to tatse
METHOD:
Fry olive oil and all spice powder on an iron pan, then add onion and garlic cloves in it.
When onion starts to brown grill mix vegetables in it, then add red chili powder, cumin seed, black pepper, coriander seeds, turmeric powder and tomatoes and stir well.
When all material is mix together add 5-6 green chilies it it and dish out.
Garnish with garlic and coriander.
MAKAI KI KHICHRI
INGREDIENTS:
Corns- 1/2 cup
Red bengal gram- 1/2 cup
Rice- 100 gm
Mustard Seed- 1/2 tsp
Cumin seed- 1/2 tsp
Green chilies- 2-3
Sugar- 1 tsp
Lemon juice- 1 tbsp
Wild parsnip- as required
Curry leaves- 2-3 leaves
Coriander- 1/2 bunch
Oil- 2 tbsp
Salt- to taste
METHOD:
Chopped the corns.
Infused Red Bengal gram and rice.
Now in a pan heat oil and add curry leaves, mustard seed, cumin seeds and green chilies.
Now add corn, salt and sugar in it.
Now add water ,wild parsnip, Bengal gram and rice and cook all together, at the end add lemon juice.
Dish out and serve with coriander garnishing.
