Eggless Pancakes by Zarnak Sidhwa

Ingredients:
- Flour 1 cup or
- Flour 1/2 cup and
- Wheat flour 1/2 cup
- Salt a pinch
- Sugar 1 tsp
- Baking powder 2 tsp (heaped)
- Cinnamon powder a pinch
- Oil 1 tbsp
- Butter (melted and warm) 1 tbsp
- Milk 3/4 - 1 cup
- Vanilla essence 1/2 tsp
- Honey/butter/maple sauce to serve
Method:
- Mix all above ingredients in bowl.
- Do not over mix, ensure that there aren't large lumps of flour.
- Leave aside batter for 5 minutes.
- Heat non-stick pan or crepe pan and allow to heat for few seconds.
- Pour large ladle full of batter in center of pan.
- Do not spread batter. Allow it to spread on its own, tilting pan.
- Cook pancake on low medium flame for half a minute and you will see that bubbles appear over pancake.
- When pancake turns a nice golden shade flip it over and cook for half a minute and remove to plate. Prepare pancakes with rest of batter.
- Serve warm topped with butter and honey or maple syrup or caramel sauce.
