Borscht, Beef Stroganoff And Symiki by Chef Gulzar

                       BORSCHT

INGREDIENTS:

  • Beef mince- 300 gm
  • Garlic paste- 1tsp
  • Onion- 2
  • Cabbage- 1
  • Carrot- 2
  • Potatoes- 2-3
  • Betroot- 2
  • Tomatoe puree- 1 cup
  • White pepper- 1 tsp
  • Cumin seed- 1tsp
  • Paprika powder- 1 tbsp
  • Sumac powder- 1/3 tsp
  • Lemon juice- 2-3 tbsp
  • Bread crumbs- 2-3 tbsp
  • Egg- 1
  • Black pepper- 1 tsp
  • Oil- 2-3 tbsp
  • Salt- to taste

METHOD:

  1. Chop onion, garlic paste, bread crumbs, salt, black pepper, egg and bee mince in a chopper and make balls of this material and staem them.
  2. Now heat oil in a pan and fry onion, garlic paste in it now add tomatoe puree and grill.
  3. Now add white pepper, cumin seed, paprika powder, sumac powder, lemon juice, cabbage, potatoes, betroot and carrot and cook all together.
  4. Now add water and salt to cook all vegetables and then add meat balls in it.
  5. Dish out and serve with coriander garnishing.

                  BEEF STROGANOOF

INGREDIENTS:

  • Beef(strips)- 300 gm
  • Gralic paste- 1tbsp
  • Mushroom(slice)- 1 cup
  • Black pepper- 1/2 tsp
  • Mustard paste- 1 tbsp
  • Cream- 1/2 cup
  • Stock- 1 cup
  • Vinegar- 1-2 tbsp
  • All purpose flour- 1-2 tbsp
  • Spring Onion- 2-3 strands
  • Butter- 1/2 cup
  • Salt- to taste

METHOD:

  1. Heat butter in a pan and fry garlic paste, spring onions and beef strips in it, now add mushrooms, black pepper and salt in it an cook.
  2. Now mix mustard paste in it then add chicken stock and cook.
  3. Now add all purpose flour to thick the gravy.
  4. At the end add cream it.
  5. Serve with green onion garnishing.

                        SYMIKI

INGREDIENTS:

  • Eggs- 6
  • Currants- 1/2 cup
  • All purpose flour- 1-1/2 cup
  • Baking soda- 1 tsp
  • Icing Sugar- 1/2 cup
  • Vinegar- 1 tsp
  • Mix fruits- 300 gm
  • Oil- for fry
  • Salt- as required

METHOD:

  1. Mix eggs, all purpose flour, currants, salt, vinegar and baking powder in a bowl and blend  well with a hand blender.
  2. Coat the material with all purpose flour with scooop and fry in hot oil
  3. Dish out and serve with mix fruits chunks and ice sugar garnishing.
