                    GOBI SHULJAM MASALA

INGREDIENTS:
  • Whole Cauliflower:              1 kg
  • Green Chilies:                       3-4
  • Red Chili Powder:                2 tbsp
  • Chopped Ginger:                  2 tbsp
  • All Spice Powder:                1/2 tsp
  • Lemon Juice:                        3-4 tbsp
  • Chopped Coriander:             1/2 bunch
  • Salt:                                       to taste
FOR MASALA PASTE:
  • Grated turnip:                      1/2 kg
  • Chopped Tomatoes:             2
  • Chopped Ginger:                 1 tbsp
  • Coriander Seeds:                 1 tbsp
  • Cumin Seeds:                      1 tsp
  • Cloves:                                 4-5
  • Black Pepper:                      5-6
  • Green Cardamoms:             2-3
  • Cinnamon:                          2-3 sticks
  • Yogurt:                               2-3 tbsp
  •  Olive Oil:                          3-4 tbsp
  • Salt:                                    to taste
METHOD:
  1. Neatly separate all flower of cauliflower. 
  2. Add 3-4 green chilies, 2 tbsp red chili powder, salt, 2 tbsp chopped ginger, 1/2 bunch coriander, 1/2 tsp all spice powder, 3-4 tbsp lemon juice in a blender and blend it together and make paste of it.
  3. Now marinate the flowers o cauliflower in this material and then steam for 10 to 15 minutes in a steamer.
FOR MAKING MASALA:
  1. Now in a pan add 3 -4 tbsp of olive oil then add 4-5 cloves, 2-3 cinnamon sticks and 5-6 black pepper and cook them together, now add 1 tbsp chopped ginger and fry them together then add grated turnip and again fry all together.
  2. Then add 1 tsp coriander , 1/2 tsp cumin, 2 tomatoes and salt and grill them together, now add 2-3 tbsp of yogurt and mix well and grill all together to make paste of it.
  3. Now take a oven proof dish and first of all add a layer of steamed cauliflower then add a layer of masala paste and then again top with a layer of steamed cauliflower.
  4. At the end bake the dish in an already heated oven of 200 degree for 15 minutes.
  5. Serve hot.
