Green Chicken Biryani by Zarnak Sidhwa

Ingredients:
- Chicken breasts (boneless and cubed) 2
- Yogurt 1/2 cup
- Salt 1-1/2 tsp
- Spinach leaves (chopped) 3 cups
- Oil 2 tbsp
- Coriander powder 2 tbsp
- Turmeric powder 1/2 tsp
- Red chilli powder 1 tsp
- Rice 1 cup
Grind to a Paste:
- Onions 2
- Ginger 1-inch piece
- Garlic 5-6 cloves
For Garnish:
- Chopped coriander leaves 2 tbsp
- Chopped green chillies 2-3
- Lemon juice of 1 lemon
Method:
- Mix ground paste with yogurt and salt.
- Rub into chicken and set aside to marinate for 1 hour.
- Place chopped spinach in a strainer and pour 2 cups of boiling water over spinach.
- Drain, puree, and set aside. Heat oil.
- Add chicken with its marinade, spinach, and spice powders.
- Cover and cook till chicken is done.
- Drain rice and add to pan.
- Mix in water.
- Cook rice till water is absorbed and rice is tender.
- Sprinkle with coriander leaves, chillies and lime juice.
