Naali Pulao by Chef Gulzar

Ingredients:

  • Beef 1/2 kg
  • Boiled bone 2
  • Basmati rice 1/2 kg
  • Onion 2
  • Green chili 2-3
  • Ginger garlic paste 2 tbsp
  • Bay leaves 2-3
  • Cloves 4-5
  • Black cardamom 3-4
  • Cinnamon sticks 2-3
  • Black cumin seeds 2 tsp
  • Black pepper corns 2 tsp
  • Ghee 1/2 cup
  • Salt as required

Method:

  1. Put ghee and onion in pan, fry until brown and keep it aside.
  2. Now put bay leaves, cloves, black cardamom, cinnamon and black cumin in ghee and crackle it.
  3. Then add beef and roast with ginger garlic paste.
  4. Now put water as required and cook until meat tender.
  5. When meat tender, strain it, separate stock and waste all whole spices.
  6. Mow heat ghee in pan, add brown onion and ginger garlic paste and give bhagar in stock.
  7. Stock boils, add rice and cook it .
  8. When it is near simmer, add meat and mix it.
  9. Now put bone in rice and simmer it.
  10. When simmer is completed, dish out it.
  11. Garnish with brown onion and serve.
