                                SABZI KI BIRYANI
INGREDIENTS:
  • Boiled Mix Vegetables:      500 gm
  • Sela Rice:                            300 gm
  • Tomatoes(Sliced):               2
  • Fried Onion:                        2-3
  • Ginger Garlic Paste:            1 tsp
  • Coriander Powder:              1 tbsp
  • Red Chili Powder:              1 tsp
  • Turmeric Powder:              1 tsp
  • All Spice Powder:              1/2 tsp
  • Cumin Seeds:                     1/2 tsp
  • Cloves:                                2-3
  • Cinnamon:                          1-2 sticks
  • Bay Leaves:                        1-2
  • Black Cardamoms:              2-3
  • Green Cardamoms:              2-3
  • yogurt:                                 1/2 cup
  • Coriander:                            1/2 bunch
  • Mint Leaves:                        1/2 bunch
  • Green Chilies:                      4-5
  • Screw Pine Essence:            few drops
  • Clarified Butter:                   1/2 cup
  • Salt:                                      to taste
METHOD:
FOR RICE PREPARATION:
  1. Boil water and bay leaves in a pan. Now add sela rice and salt and half boiled the rice and keep them separate.
FOR CHICKEN PREPARATION:
  1. Heat 1/2 cup clarified butter in a pan and add 1-2 sticks of cinnamon, 2-3 cloves, 2-3 black cardamoms, 2-3 green cardamoms and cumin seeds and cook them together.
  2. Now add 2 tomatoes, ginger garlic paste, fried onion and boiled mix vegetables in it and cook them together.
  3. When tomatoes start to fester then  add 1/2 cup of yogurt, 1 tsp red chili powder, 1 tbsp cumin seeds, 1 tbsp all spice powder and salt in it and cook them together, turn off the stove when vegetables start to cook.
HOW TO APPLY LAYERS:
  1. Now in a pot put chicken as 1st layer, then rice 4-5 green chilies, 1/2 bunch finally chopped coriander, half bunch finally chopped mint leaves, then again add a layer of chicken and then again add a layer of rice.
  2. At the end add few drops of screw pine essence and remaining fried onion on it and leave it to cook on a light flame.
  3. When rice are cooked dish out them and serve hot.

                KATTHA MEETHA RAITA

INGREDIENTS:
  •  Yogurt:                     2 Cups
  • Brown Sugar:            1 tbsp
  • Honey:                       2 tbsp
  • Mint Leaves Paste:    1/2 cup
  • Coriander:                  1/2 bunch
  • Green Chilies:            3-4
  • Onion:                         1
  • Garlic:                         3-4 cloves
  • Lemon Juice:               1/2 cup
  • Salt:                              to taste
METHOD:
  1. Light brown 1 onion and 3-4 cloves o garlic in a pan.
  2. Now add 2 cups of yogurt, 1 tbsp brown sugar, 2 tbsp honey, 1/2 cup mint leaves paste, 1/2 bunch coriander, 3-4 green chilies, 1/2 cup lemon juice and salt in a blender jug then add water and blend all material together to make a paste.
  3. Add all in a serving bowl and serve.

                              ANJEER KA HALWA

INGREDIENTS:
  • Fig:                                250 gm
  • Semolina:                      250 gm
  • Solid Milk(khoya):       250 gm   
  • Milk:                             500 gm
  • Sugar:                           1/2 cup
  • Green Cardamom:        1/2 tsp
  • Clarified Butter:           1 cup
METHOD:
  1. Firstly wash 250 mg fig and make paste of it.
  2. Now in a pan add 1 cup of clarified butter, 1/2 tsp of green cardamom and cook them together.
  3. Now add fig paste, 250 mg semolina, 1/2 cup sugar and grill them together, then add milk it and mix all together.
  4. When batter starts to thick, then grill in a way that oil starts to show separately.
  5. Dish out it and serve.
